Recipes

Recipe – Serves 2
Heat 2 tbsp of oil in a wok or a frying pan. Add 70g curry paste and fry for 2 minutes or until the aromas are released. Add 250g of diced chicken and stir fry for 5 minutes. Add 1 can coconut milk and simmer over a moderate heat until the chicken is cooked through and the sauce has thickened. Add 100g baby corn and 100g sugar snap peas and cook for a further 3 mins. Serve with The Co-op Jasmine rice. Also great with prawns, beef or mixed vegetables. Garnish with chopped coriander and sliced fresh chillies.
